Strawberry Trifle.

When you have a girl that loves strawberries as much as our Lu, you are always on the look out for something that will make her smile.  This recipe was one that a friend gave me years ago and while, I don't know if this would constitute a traditional English trifle, but it is cake and berries and creams and all sorts of yumminess, so who really cares.


Ingredients:
  • 1 lb. fresh strawberries (or more!!)
  • 2 tbsp sugar
  • 2 pkgs. instant vanilla pudding
  • 1 (8 oz) package of cream cheese, softened
  • 2 cups 1/2 inch square angel food cake (or pound cake) cut in cubes
  • whipped cream (we just used Cool Whip)

Directions:
Add sugar to strawberries and mix. Mix pudding as directed. Add cream cheese and blend with mixer. Place half of cake squares in bottom of large glass bowl. Pour half of strawberries over cake. Cover with pudding mixture. Repeat layers. Top with whipped cream.  Cover and chill overnight.

2014 Garden: Part 1

I figured with it being Earth Day and all, today was the perfect day to start blogging on our garden for this year.  This is our 3rd year with our veggie garden and we are really excited about getting things going and taking all the lessons we have learned from the last two years and hopefully doing things a little better.

So, here's where we are at so far...

We've been composting for years now, but have never dug into it to add it into our garden, but the bin was FULL this year so we figured we'd see if we were actually producing anything usable.


We were thrilled to get an entire wheelbarrow full of gorgeous soil to add to our garden.  So worth the short walk up our hill every few days to toss in our banana peals and egg shells!!


After adding in the composite we got our first seeds into the ground in March.


We planted...

  • potatoes (our family favorite)
  • onions
  • carrots
  • beets (trying something new on this one)
  • lettuce
  • spinach

There is something so thrilling about tucking those seeds into the earth with all this hope that they will turn into lovely vegetables but with no idea if they will.  It's truly a beautiful thing.

I took my first peek at how things are going up there the other day and was thrilled to see our onions well on their way and lettuces and spinach sprouting.  Hopefully sometime this week I'll convince the family to help me get a bit of weeding done so that we can get some beans into the ground.

Catching Up.

Okay, so I have been a bit out of commission for a while now (more on that, probably, someday, don't panic)...

and yes, that is cast #3 for the little man
....and so have gotten really behind in my blogging.   There are so many things that I have wanted to blog on and while I'm saving a few of them for their own posts (gardening and some recipes), the rest are getting crammed into one in fear that they will never see the light of day otherwise!

So here goes!

Spring Break:  We had an AMAZING time in Branson, MO, this year.  I swear we enjoy these little trips more and more each year.  We ate at great places.  Nate finally got to go drive a "race car" (go-cart).  I beat Anthony in mini golf again.  We hiked along a river on a perfect day.  Rode some roller coasters at Silver Dollar City.  And swam and watched a movie at our hotel.  It was truly great.

I once again decided to be present more than worry about taking pictures, but I did snap a couple on my phone...

Elise's Birthday:  Poor girl is the 2nd born.  I'm a 2nd born.  And just as those 8mm videos (yep) that my parents still claim exist although they appear to stop months before my birth and then start up again 4 YEARS later, this poor 2nd born gets her birthday blog post smashed in with a bunch of other stuff.  But it isn't because she isn't loved or valued, in fact if it is anything like my family, the 2nd born is the best one of all!  It just means that sometimes parents are lame.  Sorry about that, kid.  But hugs and kisses and glad you enjoyed your day!

Well, maybe it isn't just the 2nd borns who get screwed by parental lameness, since I have no pictures of Adele or Nate to post.  Oops!  I guess I'll have to steal Adele and Elise's new cameras and see what it is that they are snapping.  Anyway, so, Elise's Birthday...check.

And now I can't think of what else I wanted to blog about and we have eggs to hide so, there you go...

Pink Cookies.

Here's the thing, when you have a bunch of little girls that need to bring birthday treats to school, it doesn't take long before you find yourself googling/pinning recipes for treats according to color.  So, a few years ago, I went on the hunt for a recipe for "pink cookies" as requested by my then preschool daughter.  The one I found is super simple, really quite yummy and gloriously pink.


I have NO IDEA where I found this recipe, all I know is that it was years ago when Pinterest had yet to be invented and people did crazy things like find a recipe and write it down on a piece of paper.  Anyway, here goes...

Ingredients:
  • 1 box strawberry cake mix
  • 1/2 cup oil
  • 1/4 cup water
  • 1/4 cup flour
  • 1 egg
  • 1 bag chocolate chunks

Directions:
Preheat the oven to 350 degrees.  Mix all of the ingredients together, and spoon onto cookie sheet.  Bake for 8 to 10 minutes.  Let set for a few minutes to firm.  I tend to wait until I see a couple of spots barely browning and pull them out. You definitely don't want to bake these too long or they will lose their lovely pink-ness.

iPhone Video.

So back in February I finally caved and bought myself an iPhone. This changed my life in a number of ways, for instance...

I actually schedule appointments more than two weeks before we are due to have them. Gotta love a calendar that syncs with your computer and husband!

I spent way too much on an iPhone case. But seriously, how could I not when it is so adorably covered in strawberries and my Lu loves strawberries?


I'm pretty kick-ass at Candy Crush. Yup.

I actually take videos of my children. Okay, mostly Matthias. But come on, how can I not when he displays the kind of cuteness that he does!


I'm not sure what I love more in this video. Matthias's love of Huck (which is not very mutual), his adorable little jibber jabbering, or his sudden pouting. Forget it, it's the pouting...kills me every time.

Broken.

Have you ever had one of those times when you notice something in the moment but then the moment passes and you immediately forget?  And then it happens again...and you forget again?  But then someone else notices it and it really hits you...

Well, Matthias broke his arm and I have no idea how or when, even what day, it happened.

I had noticed that he had started getting upset when I cleaned off his left hand or when I was getting him dressed, but the rest of the time he had seemed pretty much fine, so I didn't think much of it.  But on Friday, my mom mentioned noticing the same thing and we tested it a few times and it really did seem to be bothering him.  I just happened to have Elise's 9 year old appointment scheduled so I called to see if they could take a look at Matthias too.  I was a little nervous because he isn't too fond of the doctor's at this point and he would completely miss his nap to go, but he was a champ and even sat still for the x-rays.  And there it was, plain as day, broken.

And he got the cutest little blue cast on...


It didn't take him long to get used to it and by the evening he seemed his happy little self.  Of course, somehow during the night his cast came off (what?!) and so we had to head over to the doctor's for cast number two Saturday morning.  It's longer and green and so far staying on (which is what it needs to do for the next 4 weeks!) so we are all pretty happy about that.


Well, minus the fact that my little thumb sucker can not now reach his favorite little thumb.  Guess he'll have to switch sides!


Here's hoping this will be one of the only casts our kiddos will have to sport!

[After I posted this I realized that that isn't the only thing that our kids have broken lately, but I don't have a picture on me of the bottom front teeth that Adele busted when the brakes didn't work on her new bike and she crashed into our house, so you'll just have to take my word for it.]

March on outside!

So, January we did some letting go.  And it felt great.

February we gave up sweets.  And I hated every minute of it!  (BUT we reminded ourselves that those things are TREATS not meal closers, so that's good.)

March?  We went outside.  Every day.  For 15 minutes.  No matter the weather.  And we all loved it.

It was hardly easy each day.  March started COLD.  On the very first day Nathan, Lucy and I were outside getting our 15 minutes running around the backyard, freezing to death, with a constant eye on the window where Anthony would signal us that our time was up.  And when he did, we all screamed and ran as fast as we could to get back inside.

We shoveled.

We took Huck on walks late at night.

The kids jumped on the trampoline.  A lot.

We started getting some yard work done.  We laid in the hammock.  We played basketball and catch and rode bikes and simply enjoy being in the fresh air.


And it felt amazing.
